Minestrone Alla Milanese
|Canned reduced sodium beef broth||29 Ounce (2 Cans, 14 1/2 Ounce Each)|
|Canned diced tomatoes||14 1⁄2 Ounce (Undrained, 1 Can)|
|Diced potato||1 Cup (16 tbs)|
|Green cabbage||1 Cup (16 tbs), chopped|
|Coarsely chopped carrots||1 Cup (16 tbs)|
|Sliced zucchini||1 Cup (16 tbs)|
|Chopped onions||3⁄4 Cup (12 tbs)|
|Sliced fresh green beans||3⁄4 Cup (12 tbs)|
|Coarsely chopped celery||3⁄4 Cup (12 tbs)|
|Water||3⁄4 Cup (12 tbs)|
|Olive oil||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Dried basil leaves||1⁄2 Teaspoon|
|Dried rosemary leaves||1⁄4 Teaspoon|
|Canned cannellini beans||15 1⁄2 Ounce, rinsed and drained (1 Can)|
COMBINE all ingredients except cannellini beans and cheese in slow cooker; mix well.
Cover and cook on LOW 5 to 6 hours.
Add cannellini beans.
Cover and cook on LOW 1 hour or until vegetables are crisp-tender.
Remove and discard bay leaf.
Garnish with cheese, if desired.
