Leftovers in eggs is a favourite breakfast of mine. Used some potatoes gratinee this way with some fresh heirloom tomatoes and basil from the garden. Pasta is excellent, or veggies or whatever in eggs. Sometimes I use left over Thai Fried Rice for a Thai omelette. Eggs are a great food. I also use the eggbeaters often too. Good to see you here again! Shanti/Mary-Anne
