Italian Sausage Soup
|Mild pork sausage/Sweet italian sausage||1⁄2 Pound, with the casings removed|
|Yellow onion||1 Medium, peeled and chopped|
|Fresh tomatoes/1 can (1 pound) tomatoes||3 Medium, peeled and chopped|
|Chicken broth||3 Cup (48 tbs)|
|Dried basil||1 Teaspoon, crumbled|
|Uncooked elbow macaroni||1 Cup (16 tbs)|
1. Cook the sausage, uncovered, in a 2-quart saucepan over moderate heat, using a spoon to break up the meat into small pieces. Cook for 5 minutes, or until no pink remains.
2. Add the onion and continue cooking, uncovered, for 5 minutes, or until the onion is soft. Add the tomatoes, chicken broth, and basil, and bring to a boil. Stir in the macaroni and simmer, covered, for 10 minutes, or until the macaroni is tender. Add the salt and serve.
