Split Pea Minestrone

Ingredients
  Sliced zucchini 2 Cup (32 tbs)
  Sliced mushrooms 1 1⁄2 Cup (24 tbs)
  Chopped onion 6 Ounce
  Diced celery 1⁄2 Cup (8 tbs)
  Ham stock/Chicken stock 3 Cup (48 tbs)
  Cooked dried split peas 1 Pound
  Salt 1⁄2 Teaspoon
  Basil 1⁄2 Teaspoon
  Black pepper To Taste
  Peeled cooked potatoes 12 Ounce, diced
Directions

In a large saucepan combine zucchini, mushrooms, onions, and celery.
Cook about 5 minutes.
Add remaining ingredients, except potatoes.
Simmer stirring occasionally about 45 minutes or until soup thickens.
Add water to adjust consistency if necessary.
Add potatoes, if desired.
Cook 10 minutes.
Divide evenly.
