Fettuccine with Bacon and Avocado
|Fettuccine||12 Ounce (375 g)|
|For bacon and avocadp sauce|
|Bacon rashers||2 , trimmed and chopped|
|Red onion||1 , sliced|
|Avocados||2 , peeled, stones removed and pureed|
|Lemon juice||2 Tablespoon|
|Freshly ground black pepper||To Taste|
|Grated parmesan cheese||3 Tablespoon|
1. Cook fettuccine in boiling water in a large saucepan . Drain and set aside to keep warm.
2. To make sauce, place bacon and onion in a frying pan and cook over a medium heat for 3-4 minutes or until onion is soft. Add pureed avocados, cream and lemon juice, and cook, stirring, over a low heat for 3-4 minutes or until heated through. Do not allow sauce to boil.
3. Add fettuccine to sauce and toss .Serve sprinkled with black pepper and Parmesan cheese. Serve immediately.
