Bruschetta with Tomato and Basil
|Ciabatta loaf||1 (sliced into 2.5 cm slices)|
|Red onion||1 Large, finely chopped|
|Garlic||1 Clove (5 gm), crushed|
|Extra virgin olive oil||2 Tablespoon|
|Lemon||1⁄2 , juiced|
|Red chilli||1 Small, very finely chopped|
|Fresh basil||1 Cup (16 tbs) (Handful)|
|Tomatoes||8 Medium, deseeded and chopped|
Start by toasting the ciabatta, either under a grill, in the oven or in a toaster.
In a large mixing bowl mix the onion, garlic, olive oil, lemon juice and chilli.
Now take the basil leaves, roll them up together, almost like a cigar, and slice.
Add these to the bowl, then add the chopped tomatoes.
To serve, top each ciabatta slice with some of the mix.
