Gnocchi with Herb Sauce
|Potato gnocchi||1 1⁄2 Pound (750 g)|
|For fresh herb sauce|
|Roughly chopped fresh parsley||4 Tablespoon|
|Roughly chopped coriander||4 Tablespoon|
|Chopped basil||4 Tablespoon (roughly)|
|Pine nuts||2 Tablespoon|
|Grated parmesan cheese||1 Tablespoon|
|Reduced fat mayonnaise||1 Tablespoon|
|Vegetable stock||1 Tablespoon|
|Freshly ground black pepper||To Taste|
1. Cook gnocchi in a large saucepan of boiling water following packet directions. Drain and keep warm.
2. To make sauce, place parsley, coriander, basil, pine nuts and parmesan cheese in a food processor or blender and process until combined. Add mayonnaise, stock and black pepper to taste and process until combined.
