1. Starting at the outside edge of the bologna slice, cut one continuous, 3/4-inch strip out of the bologna, cutting towards the center in a spiral. Be careful not to break the strip. Form the rose center by tightly rolling one end of the bologna strip. Roll the rest of the strip loosely around the center to make the petals. Secure with wooden picks.
2. With a small cookie cutter or sharp knife, cut a flower shape out of the carrot slice. Place the cutout in the center of the rose. Use the celery leaves around the base of the rose for greenery.
