Italian Gouda Spread

Ingredients
  Gouda cheese 8 Ounce, at room temperature
  Dairy sour cream 1⁄2 Cup (8 tbs)
  Italian salad dressing mix 1 1⁄2 Teaspoon
  Assorted crackers/Apple wedges 1 Cup (16 tbs)
Directions

Cut circle from top of gouda; reserve any cheese cut off.
Hollow out bottom of cheese, leaving about 1/4 inch cheese on all sides; set aside.
In small mixer bowl combine cheese from inside of shell and from top slice with sour cream and dry salad dressing mix.
Beat using electric mixer till smooth.
Spoon into cheese shell.
Cover; chill.
