Prepare soaked beans and place in a 4 to 5-quart kettle.
Pierce sausage casings in several places; add sausages and water to kettle.
Bring to a boil over high heat; then cover, reduce heat, and simmer for 20 minutes; remove sausages and set aside.
Continue simmering beans until they mash easily (25 to 50 more minutes).
Insert metal blade.
Ladle about half the beans and 1/2 cup of the cooking liquid into work bowl; process, using on-off pulses, until coarsely pureed.
Return pureed beans to cooking liquid; set aside.
Wipe work bowl, blade, and cover dry with a paper towel.
Grate cheese; place in a small serving bowl and set aside.
Place celery leaves and parsley in work bowl; finely chop for parsley.
Mince garlic; leave in work bowl.
Heat oil in a 6 to 8-quart kettle over medium heat.
Add salt pork, onion, garlic, parsley, and celery leaves; cook, stirring often, until onion is soft.
Place tomatoes and their liquid in work bowl; process, using on-off pulses, until coarsely chopped.
Add tomatoes, broth, beans, and bean cooking liquid to kettle.
Change to slicing disc.
Following directions, slice carrots, then celery; add both to kettle.
Peel potatoes; slice and add to kettle.
Bring to a boil over high heat.
Cover, reduce heat, and simmer for 15 minutes.
Following directions, slice zucchini, then shred cabbage; add to kettle.
Slice sausages with a knife; add to kettle.
Simmer until zucchini is tender to bite (8 to 10 minutes).
season to taste with salt and pepper.
