Venetian Style Calves Liver

Ingredients
  Olive oil 4 Tablespoon
  Butter 1 Ounce (25 Gram)
  Onions 1 Pound, sliced (500 Gram)
  Chopped parsley 1 Tablespoon (500 G)
  Calves liver 1 Pound, thinly sliced (500 Gram)
  Beef stock 4 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Heat the oil and butter in a frying pan, add the onions and parsley and cook gently for 2-3 minutes.
Add the liver, increase the heat and stir in the stock.
Cook the liver for 5 minutes, then remove from the heat and season to taste.
Serve immediately with mashed potatoes, topped with sauteed mushrooms and garnished with parsley.
