Eggplant Chicken Parmigiana

Ingredients
  Nonstick spray coating 1
  Boneless skinless chicken breast halves/Turkey breast tenderloin steaks 1 Pound (4 Pieces)
  Eggplant slices 4 , peeled (1/4 Inch Thick)
  Pizza sauce 1 Cup (16 tbs)
  Grated parmesan cheese 2 Tablespoon
  Shredded mozzarella cheese 1 Ounce (1/4 Of A 4 Ounce Package / 1/4 Cup)
Directions

Spray a 10-inch skillet with nonstick coating.
Preheat skillet over medium heat.
Add chicken or turkey breasts to skillet and cook about 6 minutes or till lightly browned, turning once.
Place one eggplant slice atop each chicken or turkey breast.
Pour pizza sauce over all.
Cook, covered, for 8 to 10 minutes or till chicken is no longer pink and eggplant is tender.
Sprinkle Parmesan cheese over all.
Top with mozzarella cheese.
