Eggplant Chicken Parmigiana
|Nonstick spray coating||1|
|Boneless skinless chicken breast halves/Turkey breast tenderloin steaks||1 Pound (4 Pieces)|
|Eggplant slices||4 , peeled (1/4 Inch Thick)|
|Pizza sauce||1 Cup (16 tbs)|
|Grated parmesan cheese||2 Tablespoon|
|Shredded mozzarella cheese||1 Ounce (1/4 Of A 4 Ounce Package / 1/4 Cup)|
Spray a 10-inch skillet with nonstick coating.
Preheat skillet over medium heat.
Add chicken or turkey breasts to skillet and cook about 6 minutes or till lightly browned, turning once.
Place one eggplant slice atop each chicken or turkey breast.
Pour pizza sauce over all.
Cook, covered, for 8 to 10 minutes or till chicken is no longer pink and eggplant is tender.
Sprinkle Parmesan cheese over all.
Top with mozzarella cheese.
