Pork Tenderloin Italian Style
|Tomatoes||3 Large, peeled and chopped|
|Green peppers||2 Large, chopped|
|Zucchinis||3 Large, chopped|
|Onion||1 Large, chopped|
|Pork tenderloin/Lean pork meat||1 1⁄2 Pound (750 Gram)|
|Water||375 Milliliter (1 1/2 Cup)|
|Uncooked rice||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Frozen peas package||1|
1. Brown the pork and vegetables in some oil. Add the water in which at least 2 chicken cubes have been dissolved. Season to taste and simmer for at least 1 hour.
2. Add rice and sufficient liquid to twice cover the rice (about 1 1/2 cups (375 ml). Cook again over low heat for about 1 hour. Just before serving add cooked frozen peas and the juice of 1 lemon.
