Italian Sausage & Pepper Sandwiches

Ingredients
  Mild italian sausage 1 1⁄2 Pound
  Olive oil/Salad oil 2 Tablespoon
  Onion 1 Large, thinly sliced and separated into rings
  Garlic 1 Clove (5 gm), minced / pressed
  Bell peppers 3 Medium, seeded and cut into thin strips (Green / Red)
  Canned tomatoes 15 Ounce (1 Can, Italian Style)
  Dry basil 1 Tablespoon
  Sugar 1 Tablespoon
  French rolls/Hot dog buns 4
  Salt To Taste
  Pepper To Taste
Directions

In a wide frying pan over medium heat, cook sausages until well browned; remove from pan and set aside.
Add oil, onion, garlic, and peppers to drippings; cook, stirring occasionally, until vegetables are soft (about 15 minutes).
Stir in tomatoes (break up with a spoon) and their liquid, basil, and sugar.
Add sausages and cook, covered, for 15 minutes.
Uncover, increase heat to medium-high, and cook, stirring occasionally, until almost all liquid has evaporated (about 5 minutes).
Season to taste with salt and pepper.
Place a sausage in each roll and spoon some sauce over top; close and eat out of hand.
Or leave open-faced and eat with knife and fork.
