|Corn meal||1⁄2 Cup (8 tbs)|
|Boiling water||2 Cup (32 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Grated parmesan cheese||2⁄3 Cup (10.67 tbs)|
|Egg||1 , well beaten|
|Olive oil/Salad oil||2 Tablespoon|
|Fine dry bread crumbs||1⁄4 Cup (4 tbs)|
1. Sprinkle the corn meal slowly into the rapidly boiling water with the salt and cayenne. Cook 20 minutes, stirring continuously with a wooden spoon.
2. Remove from the heat, blend in the mustard, cheese, butter or margarine and the egg. Pour into a rinsed shallow pan and chill until firm.
3. Cut into rounds or squares. Place on a greased baking sheet. Brush each square with olive oil. Sprinkle with crumbs. Place under the broiler heat until the crumbs are lightly browned.
