In a small bowl combine egg, mayonnaise, salt, and pepper.
In separate bowl mix together bread crumbs, cheese, and oregano.
Dip each slice of eggplant in egg mixture, then dip into crumb mixture to evenly coat each side.
Place in shallow baking dish.
Sprinkle with any extra egg and crumb mixture.
Bake at 450°F.
for 15 minutes or until crispy, turning once.
