Tasty Eggplant Parmigiana
|Pared eggplant slices||2 Cup (32 tbs) (3/4 Inch Thick)|
|Grated mozzarella cheese||1 1⁄2 Ounce|
|Grated parmesan cheese||1⁄2 Ounce|
|Tomato sauce||3⁄4 Cup (12 tbs) (No Sugar Added)|
|Garlic powder||To Taste|
Sprinkle eggplant with salt, pepper, and garlic powder.
Place on baking sheet and broil 4 inches from source of heat for 8 minutes or until tender, turning once.
In a 1-quart casserole layer 1/2 of the eggplant, 1/2 the sauce, and 1/2 the cheese.
Cover and bake at 350°F.
for about 15 minutes.
Remove cover and bake 15 minutes longer.
