Asparagus And Roasted Red Pepper Frittata

A great way to Add Flavor to the Start of your Day
Ingredients
  Salt To Taste
  Pepper To Taste
  Asparagus spears 4 , cut 1" pieces on bias
  Roasted red pepper To Taste
  Green onions 2 , chopped
  Eggs 2
  Egg whites 2
  Fat free half and half 1 Tablespoon
  Reduced fat mozzarella 1⁄2 Cup (8 tbs)
  Margarine 1 Tablespoon
Directions

In a non stick Pan, Melt Margerine over Med high Heat\
Sautee Scallons, asparagus, and Bell Peppers about 5 minutes
Beat Eggs, Whites, and Milk, adding Salt and Pepper to taste
Add Eggs to Pan and Stir for ~ 2 Minutes till Eggs Start to come together
Put Cheese on top and place under Broiler till lightly browned (Make sure Handle is Heat proof, or is not placed directly under the Broiler)

This recipe is good. I think this is an omelette type breakfast dish. But is it Italian or Spanish?

It Could be either or, both Cultures prepare Frittata's this way the Most known Frittata is also called a "Spanish Omelete" and consists of potato's and Onions prepared the same way. I suppose the Spainards call thiers Tostadas not Frittatas. Ah Semantics can be such fun
