Skewers Of Meat Sicilian Style

Ingredients
  Ground pork 1 Pound
  Finely chopped parsley 1⁄4 Cup (4 tbs) (Fresh Ones)
  Finely chopped fresh basil 1 Tablespoon
  Mozzarella cheese 1 Pound, sliced
  Crustless italian bread loaf 1 , sliced
  Eggs 3 , well beaten in a flat bowl
  Fine bread crumbs 2 Cup (32 tbs)
  Oil/Lard 2 Cup (32 tbs) (For Deep Frying)
  Salt To Taste
  Pepper To Taste
Directions

Salt and pepper the meat; add the parsley and basil.
Mix well and form into 1 1/2-inch [4-cm.] round patties.
Cut the cheese and the bread into round slices, or medallions, of the same size.
On skewers, place in turn a medallion of bread and one of cheese, and a meat patty, repeating until each skewer is full, with bread at each end.
Roll the skewers in the eggs, then in the bread crumbs, and deep fry in oil or lard.
Slide the contents of the skewers off onto a large platter for serving.
