Preheat the oven to 180°C / Gas Mark 4.
Beat the butter and sugar together in a bowl until smooth, then work in the ground almonds and flour, until the mixture forms a stiff dough.
Break the dough into 20 pieces (roughly the size of walnuts), and form the pieces into balls.
Arrange the balls on baking trays, leaving a little room between each.
Bake the biscuits in the oven for 10 minutes, until golden.
Remove from the oven and transfer to a wire rack to cool.
Meanwhile, melt the chocolate pieces in a bowl set over a saucepan of gently simmering water.
Remove the bowl from the heat, stir in the butter until fully combined, then leave to cool.
When the biscuits are cool, use the chocolate butter to sandwich two biscuits together.
