|Garlic||1 Tablespoon, minced|
|Tomatoes||2 Large, chopped|
|Extra virgin olive oil||1⁄2 Cup (8 tbs)|
Start with removing juice and seeds from the tomatoes.Chop the tomatoes,set aside.Mix salt, pepper, sugar, basil, garlic, and extra virgin olive oil.Pour the mixture over the tomatoes.
Toss tomatoes to make sure they are all coated, and chill in the refrigerator for at least 1 hour to let the flavors mix well.You can use this as a topping over Italian garlic bread or plain bread(toasted).It's wonderful with some grated Parmesan or mozzarella cheese sprinkled on top.
