Grilled Portabella Onion Burgers

Portabella mushrooms are surprisingly hearty and satisfying. You might not think that a mushroom would have enough sticking power to cut it as a meal, but I must say, the Portabella mushrooms certainly do. These burgers are a nice change from your everyday meaty burgers, and I find that they do a great job at satisfying both my vegetarian and meat-eating friends!
  Round rolls 2
  Garlic 1
Extra virgin olive oil 2 Tablespoon
Portabella mushroom caps 2 , wiped down with a wet towel
  Goat cheese 2 Ounce
Red onion 1⁄2 , sliced thick
Roasted red peppers 1⁄2 Cup (8 tbs)
  Arugula 1 Cup (16 tbs)
  Balsamic vinegar 2 Tablespoon
  Oregano 2 Teaspoon
  Salt To Taste
  Pepper To Taste

1. Season both sides of mushrooms and onions with extra virgin olive oil, balsamic vinegar, oregano and salt and pepper.
2. Heat grill pan over medium high heat. Place mushrooms and onions in the pan and grill for 3-5 minutes on each side.
3. In the meantime drizzle rolls with extra virgin olive oil and toast under the broiler for 2 minutes (watch them closely they toast fast!) Remove toasted rolls and rub generously with garlic clove.
4. Build sandwich - Layer arugula, onions, mushrooms, peppers and another handful of arugula. On the top roll spread with goat cheese. Pop it on the top and enjoy!!

Love portobellas, but we always remove the gills which can be bitter.

Portobellas are mushrooms. We often grill portobellos that we dizzle EVOO and grilic on, sometimes we toss some chiles on top. Then we cut them into wedges and serve as appetizers. Yummy. Shanti/Mary-Anne

Oops. Fat fingered the comment. Should have been "do you have any more recipes for the same (mushroom burgers)"

giggle It was late when you posted, I knew you knew portobellos were mushrooms as they are even at Costco! I like using them in pasta sauce in place of meat-just saute them with red wine for a "beefy" flavour. Shanti/Mary-Anne

Yeah, it was kinda late. Speaking of mushroom burgers, there is a restaurant by the name Plutos close to our place in Plao Alto. They have the best mushroom burgers. Not sure if you have tried them.
