|Meat/1 cup soya mince, ground||1 Cup (16 tbs), ground, seasoned|
1. Make the pasta dough as directed and roll it out thinly.
2. Using a biscuit cutter, cut into circles about 1 1/2" in diameter.
3. Put a little meat filling in the centre of each circle and fold the circle in half over the filling. Taking the semi-circle in your right hand, fold it around your left index finger, so that the two ends overlap slightly to form a triangle. Press it firmly together and turn upwards.
4. Dry them on a clean dry cloth. Tortellini can be served with meat sauce or in soup.
