1. Melt butter in a pan, add garlic and fry gently, for 2-3 minutes.
2. Add flour, stirring well, gradually blend in the spinach puree, stock, cream.
3. Cook over low heat, bring to boil, add salt and pepper, mix well, stirring continuously. Simmer for 10-13 minutes, add cheese. Cook for another 5 minutes. Remove and serve hot.
