Italian Stewed Pork With Celery

Ingredients
  Garlic 1 Clove (5 gm)
  Olive oil/Cooking oil 2 Tablespoon
  Carrot 1 , minced
  Lean pork 2 Pound, cut into bite size pieces
  Dry red wine/White wine 1 Cup (16 tbs)
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Sliced celery 2 1⁄2 Cup (40 tbs)
  Bouillon/Water 1 Cup (16 tbs) (adjust quantity as needed)
  Chopped tomatoes 1 Cup (16 tbs) (fresh or canned)
Directions

Brown garlic in oil and discard garlic.
Add carrot, pork, wine, salt, and pepper.
Cook, covered, over low heat for 1 1/2 hours.
Cook celery in bouillon until almost tender; drain.
Add cooked celery and tomatoes to pork mixture for the last 15 minutes of cooking time.
