Tuscan Bread Soup

Ingredients
  Olive oil 1 Tablespoon
  Onion 1 Small, chopped
  Garlic cloves 5 Large, crushed
  Ripe tomatoes 7 Large, peeled and quartered (fresh)
  Tomato paste 3 Tablespoon
  Cayenne pepper 1⁄8 Teaspoon
  Coarsely chopped fresh basil 2 Tablespoon
  Day old bread 1 Pound, cubed (rye, whole wheat)
  Chicken stock 5 Cup (80 tbs)
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
Directions

1. In a large pot, heat oil and saute onion and garlic about 10 minutes until soft but not brown.
2. Add tomatoes, tomato paste and cayenne and simmer 20 minutes.
3. Add basil, bread, stock, salt and pepper. Simmer 10 to 15 minutes, stirring occasionally to break up the bread.
4. Spoon into soup bowls and serve.
