Tuscan Bread Soup
|Olive oil||1 Tablespoon|
|Onion||1 Small, chopped|
|Garlic cloves||5 Large, crushed|
|Ripe tomatoes||7 Large, peeled and quartered (fresh)|
|Tomato paste||3 Tablespoon|
|Cayenne pepper||1⁄8 Teaspoon|
|Coarsely chopped fresh basil||2 Tablespoon|
|Day old bread||1 Pound, cubed (rye, whole wheat)|
|Chicken stock||5 Cup (80 tbs)|
|Freshly ground black pepper||1⁄4 Teaspoon|
1. In a large pot, heat oil and saute onion and garlic about 10 minutes until soft but not brown.
2. Add tomatoes, tomato paste and cayenne and simmer 20 minutes.
3. Add basil, bread, stock, salt and pepper. Simmer 10 to 15 minutes, stirring occasionally to break up the bread.
4. Spoon into soup bowls and serve.
