Italian Rice And Mozzarella Salad With Vegetables

  Cooked rice 3 Cup (48 tbs)
  Diced carrots 1⁄4 Cup (4 tbs)
  Diced celery 1⁄4 Cup (4 tbs)
  Diced sweet red pepper/Diced sweet green pepper 1⁄4 Cup (4 tbs), diced
  Frozen green peas 1⁄2 Cup (8 tbs)
  Chopped red onion 1⁄4 Cup (4 tbs)
  Chopped fresh parsley 1⁄4 Cup (4 tbs)
  Diced low fat cheese 1⁄4 Cup (4 tbs) (Example, Mozzarella)
  Cider vinegar 3 Tablespoon
  Olive oil/Vegetable oil 2 Tablespoon
  Orange juice 2 Tablespoon
  Light mayonnaise 1 Tablespoon
  Dried thyme/1 teaspoon fresh thyme 1⁄4 Teaspoon
  Dried basil/1 teaspoon fresh basil 1⁄4 Teaspoon
  Dried oregano/1 teaspoon fresh oregano 1⁄4 Teaspoon
  Freshly ground pepper To Taste

In salad bowl, combine rice, carrots, celery, sweet pepper, peas, onion, parsley and cheese; set aside.
In small bowl, combine vinegar, oil, orange juice, mayonnaise, thyme, basil and oregano; mix well.
Pour over salad and toss to mix.
Season with pepper to taste.
