Italian Sausage Crepes

Ingredients
  Crepes 18
  Italian sausage 1 Pound (500 g)
  Cooked beef 3 Cup (48 tbs), chopped
  Cooked chopped spinach 3 Cup (48 tbs)
  Grated parmesan cheese 1⁄2 Cup (8 tbs)
  Salt 1 1⁄2 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Butter 85 Gram (1/3 cup)
  Plain flour 1⁄3 Cup (5.33 tbs)
  Milk 750 Milliliter (3 cups)
  Salt 1 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Chopped chives 1 Tablespoon
Directions

Make the crepes using the Basic Crepe Batter or Spinach Crepe Batter.
Set aside.
Chop the Italian sausage into small bits.
Mix the sausage with the beef, spinach, Parmesan cheese, salt and pepper.
Set aside.
Make the white sauce by melting the butter in a saucepan.
Remove from the heat and stir in the flour.
Return to a low heat and cook for three minutes.
Slowly add the milk, stirring constantly, and cook until thickened.
Add the salt and pepper and blend thoroughly.
Fill each crepe with the sausage mixture.
Fold over and place in a buttered shallow baking dish.
Pour on the white sauce and bake in a 350°F (180°C oven for 20-30 minutes.)
