Easy Italian Fish Soup

Ingredients
  Cooking oil 3 Fluid Ounce (75 Milliliter)
  Onion 1 Large, thinly sliced
  Tomatoes 2 Pound, skinned (1 Kilogram)
  Parsley 30 Milliliter, chopped (2 Tablespoon)
  Garlic 1 Clove (5 gm), crushed
  Mixed white fish fillet 2 Pound, chopped (1 Kilogram)
  Fish stock 1 Pint (600 Milliliter)
  Salt To Taste
  Pepper To Taste
Directions

Heat the oil in a saucepan.
When it is hot, add the onion and fry for 5 minutes.
Add the tomatoes, parsley and garlic, cover and simmer for 15 minutes.
Add the fish pieces and stock, recover and bring to the boil.
Simmer for 10 to 15 minutes, or until the fish flakes easily.
Season to taste.
