Spinach Salad With Creamy Italian Dressing

Ingredients
  Sun-dried tomatoes 1 Ounce (1/2 Cup)
  Hot water 1 Cup (16 tbs)
  Cucumber 1⁄2 Medium
  Torn fresh spinach 3 Cup (48 tbs)
  Purple onion 1⁄2 Small, sliced and separated into rings
  Sliced fresh mushrooms 1⁄2 Cup (8 tbs)
  Italian dressing 1 1⁄2 Ounce
Directions

Combine tomato and water in a small bowl; cover and let stand 15 minutes.
Drain; coarsely chop tomato, and set aside.
Holding cucumber in one hand, run a citrus stripper or vegetable peeler lengthwise down the sides of cucumber to create strips about every 1/2 inch, if desired.
Thinly slice cucumber.
Combine cucumber, tomato, spinach, onion, and mushrooms; toss gently.
Arrange salad evenly on individual salad plates.
Drizzle Creamy Italian Dressing evenly over each salad.
