|Skinless, boneless chicken breast halves||16 Ounce (4 Breast Halves, 4 Ounce Each)|
|Olive oil||1 Tablespoon|
|Sliced mushrooms||8 Ounce (1 Package)|
|Zucchini||1 Small, quartered lengthwise and sliced|
|Garlic||4 Clove (20 gm), minced|
|Chopped plum tomato||1 Cup (16 tbs)|
|Chopped red onion||1⁄2 Cup (8 tbs)|
|Chopped fresh basil||1⁄2 Cup (8 tbs)|
|Balsamic vinegar||4 Teaspoon|
|Grated fresh parmesan cheese||1 Ounce (1/4 Cup)|
1. Preheat broiler.
2. Combine garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a small bowl,- sprinkle over chicken. Place chicken on a broiler pan coated with cooking spray,- broil 6 minutes on each side or until chicken is done. Remove chicken from pan, and keep warm.
3. Heat oil in a large nonstick skillet over medium-high heat. Add 1/4 teaspoon salt, mushrooms, zucchini, and minced garlic,- saute 2 minutes. Add 1/8 teaspoon black pepper, tomato, onion, basil, and vinegar,- saute 3 minutes. Serve vegetable mixture over chicken,- sprinkle with cheese.
