Italian Tomato Sauce
|Finely chopped onion||1 Cup (16 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Olive oil||2 Tablespoon|
|Tomatoes||5 Pound, peeled and cored|
|Finely chopped green pepper||1 Cup (16 tbs)|
|Italian seasonings||1 Tablespoon|
Cook chopped onions and garlic in oil in a large sauce pot until tender.
Add remaining ingredients and simmer about 1 hour, stirring occasionally.
Press mixture through food mill; discard seeds.
Cook mixture over medium-high heat until thickened, about 1 hour.
Stir frequently to prevent sticking.
Pour hot into hot jars, leaving 1/4-inch head space.
Process 35 minutes in boiling water bath.
