Meat Loaf Italian Style
|Saltine cracker crumbs||1 Cup (16 tbs)|
|Ground beef||1 1⁄2 Pound|
|Canned tomato paste||6 Ounce (1 Can)|
|Onion||1 Medium, finely chopped|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Curd cream style cottage cheese||12 Ounce (1 Carton, 1 1/2 Cups)|
|Canned broiled chopped mushroom||3 Ounce, drained (1 Can, 1/2 Cup)|
|Snipped parsley||1 Tablespoon|
Set aside 1/2 CUP or the cracker crumbs.
Combine remaining crumbs with next 7 ingredients; mix well.
Pat half the mixture in bottom of 8x8x2-inch baking pan.
Combine reserved crumbs with remaining ingredients; spread evenly over meat in pan.
Top with remaining meat mixture.
Bake at 350° for 1 hour.
Let stand 10 minutes before serving.
