|Sugar||1⁄4 Cup (4 tbs)|
|Sherry/Marsala||1⁄4 Cup (4 tbs)|
|Whipping cream||1⁄2 Cup (8 tbs), chilled|
Beat egg yolks in small mixer bowl on high speed until thick and lemon colored, 3 to 5 minutes.
Add salt; gradually beat in sugar, scraping bowl occasionally.
Blend in sherry on low speed.
Pour mixture into top of double boiler.
Place enough hot water in bottom part of double boiler so that top part does not touch water.
Cook over medium heat, stirring constantly, until thick, 5 to 7 minutes.
Place top of double boiler in bowl of ice and water; stir mixture constantly until it is cool.
In chilled bowl, beat whipping cream until stiff.
