Fresh Peas With Pancetta
|Pancetta slice||1 Ounce, chopped (3 Slices)|
|Chopped white onions||3⁄4 Cup (12 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Shelled green peas/Frozen petite green peas||3 Cup (48 tbs)|
|Fat free low sodium chicken broth||1 Cup (16 tbs)|
|Chopped fresh flat leaf parsley||1⁄4 Cup (4 tbs)|
Heat a large nonstick skillet over medium-high heat.
Add pancetta, saute 5 minutes or until crispy.
Remove pancetta from pan, reserving drippings in pan.
Add onion and garlic to pan, saute 1 minutes or until tender.
Add peas, broth, sugar, and salt to pan.
Simmer 5 minutes or until peas are tender, stirring occasionally.
Stir in pancetta arid chopped parsley.
