Caramel Velvet Gelato
|Caramel powder||4 Tablespoon|
|Whipping cream/Half and half||1 1⁄2 Cup (24 tbs)|
|Milk||1 1⁄2 Cup (24 tbs)|
|Egg yolks||4 Large|
Prepare Caramel Powder, place in a 3- to 4-quart pan, and stir in cream and milk.
Cook over medium-high heat, stirring often, until caramel is melted (it will harden first).
Place egg yolks in a small bowl and whisk in a little of the hot milk mixture; then stir back into pan.
Reduce heat and cook, stirring with a wooden spoon, until custard coats back of spoon in a thin, smooth, velvety layer (about 8 minutes).
Remove from heat and add vanilla.
Let cool, then cover and refrigerate until cold (at least 1 1/2 hours) or until next day.
