Homemade Garlic Shrimp Scampi

Ingredients
  Large raw shrimp 2 Pound
  Liquid butter buds 1⁄2 Cup (8 tbs)
  Lite salt 1⁄2 Teaspoon
  Garlic 6 Clove (30 gm), crushed
  Chopped parsley 1⁄4 Cup (4 tbs)
  Grated lemon peel 2 Teaspoon
  Lemon juice 2 Tablespoon
  Lemon wedges 6 (From 1 Lemon)
  Cooked white rice 4 Cup (64 tbs) (Plain Rice)
Directions

Preheat oven to 400° F.
Remove shells from shrimp, leaving shell on tail section only.
Devein, wash under running water, and drain on paper towels.
Spray a 13 x 9 x 2-inch baking dish with a non-fat cooking spray.
Blend together liquid Butter Buds, lite salt, garlic, and 2 Tbs.parsley.
Pour into prepared dish.
Arrange shrimp in single layer in baking dish.
Bake uncovered, 5 minutes.
Turn shrimp.
Sprinkle with lemon peel, lemon juice, and remaining parsley.
Bake 8-10 minutes longer, or until just tender.
Arrange shrimp over plain cooked white rice.
Pour garlic-Butter Buds mixture overshrimp.
Garnish with lemon wedges.
Do not overcook the shrimp or they will be tough.
If using smaller shrimp, cut down on cooking time.
