Ingredients
  Vegetable cooking spray 1
  Olive oil 1 Teaspoon
  Eggplant 10 Ounce, peeled and diced (1 Small Size)
  Finely chopped onion 1⁄4 Cup (4 tbs)
  Diced celery 1⁄4 Cup (4 tbs)
  Garlic 1 Clove (5 gm), minced
  Sliced pimiento stuffed olives 1 Tablespoon
  Chopped pimento 2 Tablespoon
  Capers 1 Tablespoon
  Reduced calorie catsup 2 Teaspoon
  Red wine vinegar 1 Teaspoon
  Dried whole oregano 14 Teaspoon
  Ground red pepper 1⁄8 Teaspoon
Directions

Coat a medium skillet with cooking spray, add oil.
Place over medium heat until hot.
Add eggplant, onion, celery, and garlic; saute until render, stirring often.
Stir in remaining ingredients, cook until heated.
