Easy Pesto Salmon
|Fresh spinach leaves||2 Cup (32 tbs)|
|Basil leaves||1⁄2 Cup (8 tbs)|
|Fat free low sodium chicken broth||1⁄4 Cup (4 tbs)|
|Olive oil||1 Tablespoon|
|Garlic||3 Clove (15 gm), peeled|
|Cooking spray||1 Tablespoon|
|Salmon fillets||12 Ounce, skinned (2 Fillets, 6 Ounces Each)|
|Hot cooked brown rice||2⁄3 Cup (10.67 tbs)|
1. Preheat oven to 400°.
2. Place first 6 ingredients in a food processor or blender, process until smooth. Spoon 3 tablespoons pesto into bottom of an 8-inch square baking dish coated with cooking spray. Top with salmon fillets, spread with remaining pesto.
3. Bake at 400° for 20 minutes or until fish flakes easily when tested with a fork.
