Parmesan Minestrone

Ingredients
  Oil 1⁄2 Cup (8 tbs)
  Butter 60 Gram
  Onions 2 , peeled and chopped
  Carrots 3 , finely chopped
  Potato 1 , peeled and chopped
  Kidney bean 1⁄4 Cup (4 tbs)
  Zucchinis 2 , chopped
  Cabbage 1⁄4 , shredded
  Beef stock 3 Cup (48 tbs)
  Canned peeled tomatoes 800 Gram (2 Cans, 400 Gram Each)
  Salt To Taste
  Pepper To Taste
  Parmesan cheese 1 Tablespoon
Directions

1. Combine oil, butter and onion. Cook for 2-3 minutes on high.
2. Add carrots and potato. Cover and cook for 5 minutes on high.
3. Add kidney beans, zucchini and cabbage. Cover and cook for 3 minutes on high. Add stock, undrained tomatoes, salt and pepper. Cook, covered, for 15-20 minutes on high, stirring occasionally.
