Crunchy Veal Parmigiana

  Buttery cracker crumbs 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Grated parmesan cheese 3⁄4 Cup (12 tbs), divided
  Veal cutlets 48 Ounce (Six 8 Ounce Pieces)
  Egg 1 , beaten
  Mozzarella cheese 1 Cup (16 tbs), grated
  Tomato sauce 16 Ounce (Two 8 Ounce Cans)
  Oregano 1 Teaspoon

Combine crumbs, salt, pepper and 14 cup Parmesan cheese.
Dip cutlets in beaten egg; coat both sides with crumb mixture.
Place cutlets in 2-quart oblong glass baking dish; cover.
Microwave at MEDIUM HIGH (7) 8 to 10 minutes.
Turn cutlets over; sprinkle with mozzai ella cheese.
Combine tomato sauce and oregano; pour over cutlets.
Sprinkle with !4 cup Parmesan cheese; cover.
Microwave at MEDIUM HIGH (7) 12 to 18 minutes until tender.
Let stand, covered, 10 minutes.
