Easy Italian Grilled Veggies
|Butter/Margarine||1⁄4 Cup (4 tbs), softened|
|Lemon pepper||2 Tablespoon|
|Potato||1 Large, cut lengthwise into fourths|
|Zucchini||1 Medium, cut lengthwise into half|
|Yellow summer squash||1 Medium, cut lengthwise into half|
|Bell peppers||2 Large, cut lengthwise into fourths and seeded|
|Onion||1 Medium, cut into 1/2 inch slices|
|Italian dressing||1⁄4 Cup (4 tbs)|
1. Heat coals or gas grill for direct heat. Mix butter and lemon pepper. Brush on potato, zucchini, squash, bell peppers and onion.
2. Cover and grill vegetables 4 inches from medium heat 10 to 20 minutes, turning frequently, until tender.
3. As vegetables become done, remove from grill to platter. Sprinkle with dressing.
