Italian Cupboard Soup

Ingredients
  Boneless pork chops 2 , cubed
  Canned chopped tomatoes 15 Ounce, undrained (1 Can)
  Canned chicken broth 29 Ounce (2 Cans, 14 1/2 Ounce Each)
  Canned cannellini beans/Canned great northern beans 15 Ounce, drained (1 Can)
  Fresh spinach leaves 8 Ounce, torn
Directions

In a deep saucepan, brown the pork in a litde oil; add all ingredients, including onions if desired, except spinach; bring to a boil, lower heat and simmer for 15 minutes; stir in torn spinach and cook for 2 minutes more.
Top servings with grated Parmesan cheese.
