Italian Cupboard Soup
|Boneless pork chops||2 , cubed|
|Canned chopped tomatoes||15 Ounce, undrained (1 Can)|
|Canned chicken broth||29 Ounce (2 Cans, 14 1/2 Ounce Each)|
|Canned cannellini beans/Canned great northern beans||15 Ounce, drained (1 Can)|
|Fresh spinach leaves||8 Ounce, torn|
In a deep saucepan, brown the pork in a litde oil; add all ingredients, including onions if desired, except spinach; bring to a boil, lower heat and simmer for 15 minutes; stir in torn spinach and cook for 2 minutes more.
Top servings with grated Parmesan cheese.
