Chicken Cacciatore With Parmesan Cheese
|Chicken||3 Pound, cut up (1 Chicken, 2 1/2 To 3 Pound)|
|Green pepper||1 Medium, coarsely chopped|
|Onion||1 Medium, sliced|
|Tomato||1 Large, seeded and coarsely chopped|
|Canned tomato sauce||15 Ounce (1 Can)|
|Canned tomato paste||6 Ounce (1 Can)|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Fennel seed||1⁄4 Teaspoon|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
In 3-quart casserole, place chicken pieces with meaty portions along outside of dish.
Add green pepper and onion slices.
In 4-cup glass measure, combine tomato, tomato sauce, tomato paste, wine, bay leaf, garlic, oregano, salt, fennel seed and pepper.
Mix well and pour over chicken.
Microwave at high (10) 27 to 32 minutes until chicken is done and vegetables are tender; rearrange chicken pieces after 10 minutes.
Remove bay leaf.
Sprinkle with Parmesan cheese.
