Bruschetta With Basil Mozzarella & Tomatoes

Ingredients
  French baguette 1 Large, sliced into 1/4 inch slices
  Olive oil 2 Tablespoon
  Basil 1 1⁄4 Bunch (125 gm), washed and chopped, stems discarded (1 Large Bunch)
  Olive oil 2 Teaspoon
  Fresh mozzarella 1⁄2 Pound, diced small
  Tomatoes 4 , seeded and chopped (Plum Tomatoes Work Well)
  Garlic 2 Clove (10 gm), minced
Directions

Grill or toast bread, turning once until it is golden brown.
Store in an airtight container until ready to use.
In a bowl, combine basil, mozzarella, tomatoes, garlic, salt and pepper.
Brush the toast with a little olive oil.
Spoon the tomato-basil mixture onto the oiled side of the toasts and drizzle any remaining olive oil over them.
Broil for 3 to 5 minutes until the cheese is melted.
