Bruschetta With Basil Mozzarella & Tomatoes
|French baguette||1 Large, sliced into 1/4 inch slices|
|Olive oil||2 Tablespoon|
|Basil||1 1⁄4 Bunch (125 gm), washed and chopped, stems discarded (1 Large Bunch)|
|Olive oil||2 Teaspoon|
|Fresh mozzarella||1⁄2 Pound, diced small|
|Tomatoes||4 , seeded and chopped (Plum Tomatoes Work Well)|
|Garlic||2 Clove (10 gm), minced|
Grill or toast bread, turning once until it is golden brown.
Store in an airtight container until ready to use.
In a bowl, combine basil, mozzarella, tomatoes, garlic, salt and pepper.
Brush the toast with a little olive oil.
Spoon the tomato-basil mixture onto the oiled side of the toasts and drizzle any remaining olive oil over them.
Broil for 3 to 5 minutes until the cheese is melted.
