Ingredients
  Salt pork 2 Ounce
  Olive oil 2 Tablespoon
  Onion 1 Medium, chopped
  Celery ribs 3 , chopped
  Carrots 4 Medium, peeled and chopped
  Canned italian peeled tomatoes 14 Ounce, drained and chopped (1 Can)
  Water 8 Cup (128 tbs) (3 Tablespoons)
  Peeled cubed baking potato 2 Cup (32 tbs) (1 1/2 Inch)
  Dried thyme 1 Teaspoon
  Dried rosemary 1⁄2 Teaspoon
  Peeled cubed pumpkin/Butternut squash 3 Cup (48 tbs) (3/4 Inch)
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Fresh spinach leaves 1 Cup (16 tbs), washed
  Chopped fresh basil/Italian flat-leaf parsley 2 Tablespoon
  Extra-virgin olive oil 4 Tablespoon
  Grated parmesan cheese 4 Tablespoon
Directions

1. Cook salt pork in a medium saucepan of boiling water 15 minutes to remove salt; drain. Cut into 1/4-inch dice.
