Easy Healthy Pesto Chicken

This is a super easy recipe that tastes yummy!
Ingredients
  Chicken breast tenderloins/Regular chicken breasts 1 Pound
  Pesto 1⁄2 Cup (8 tbs)
  Mozzarella cheese 2 Ounce
Directions

Preheat oven to 375 degrees. Spread 1/4 c pesto in a baking dish. Place chicken on top of pesto. Add the rest of the pesto (1/4 c) on top of the chicken. Bake for 25 minutes. Top with mozzarella and bake for 5 minutes more or until chicken is done.

Pesto chicken has always been a simple dish to prepare, but the healthy version that the chef shows here is definitely a refreshing change! It is a very low fat, low cal and low carb version of pesto sauce that she uses here. Definitely worth a watch.

I use pesto for pasta, as a spread on sandwich or even pizza but haven't tried baking it with chicken. Sounds good though!!

I make my own Pesto and then use it for all kinds of things Mixing with creamcheese and or sour cream for dips, using on breads, mixing with mayo, eggs, mashed potatoes, even use to season chicken and of course Pasta The Tortilla Guy
