Mediterranean Mixed Cheese Linguine
|Peas||3⁄4 Cup (12 tbs)|
|Feta cheese||1⁄4 Cup (4 tbs), crumbled|
|Parmesan cheese||2 Tablespoon, grated|
Cook the linguine until al dente.
Cook the peas in a small amount of water just until tender but still bright green, about 10 minutes.
While the pasta is cooking, place the egg in a serving bowl, beat lightly, and add the cheeses.
Beat until well blended.
When the pasta is cooked, drain and toss immediately with the peas and cheese sauce.
