Luganega: Northern Italian Sausage

Ingredients
  Italian white vermouth 1⁄2 Cup (8 tbs)
  Orange juice 2 Teaspoon
  Parmesan cheese 4 Teaspoon, grated
  Ground coriander 1⁄4 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Lemon peel 1⁄4 Teaspoon, ground and dry
  Ground nutmeg 1⁄4 Teaspoon
  Orange peel 1⁄4 Teaspoon, ground and dry
  Ground black pepper 1⁄4 Teaspoon
  Salt 3⁄4 Teaspoon
  Ground pork 1 Pound
  Wheat germ 1 Cup (16 tbs)
Directions

Chill vermouth and pour into a large bowl.
Blend seasonings into the liquid.
Add pork and wheat germ.
Mix sausage the old-fashioned way.
