Linguine With Cheese And Tomatoes
|Plum tomatoes||1 1⁄2 Cup (24 tbs), diced|
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Goat cheese||1⁄2 Cup (8 tbs), crumbled|
|Asiago cheese||1⁄4 Cup (4 tbs), crumbled|
|Grated low fat mild cheese||1 Cup (16 tbs) (Mozzarella, Havarti, Etc)|
|Mixed herbs||1 Tablespoon, chopped (Rosemary, Sage, Thyme, Oregano /1 Tsp. Mixed Dry)|
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Combine in casserole dish.
Add 2/3 cup low-fat cheese and mix with above, saving other third for topping.
Add to the casserole dish above and mix.
Add pasta, combine, and top with remaining low-fat cheese.
Bake approx 15 minutes, just until hot.
